Cornmeal and Molasses Waffles

This is our family’s favorite waffle recipe. The earthiness of the cornmeal and molasses work so well together, they’re addictive. This is based off of a recipe in Mark Bittman’s excellent How To Cook Everything.

1 cup cornmeal
1 cup flour (all purpose or whole-wheat)
½ tsp salt
2 tsp baking powder
1 cup milk
½ cup molasses
2 eggs
½ stick butter, melted

1. Melt the butter in a small pan on the stove. (Once melted, remove from heat.)
2. Preheat waffle iron.
3. Combine dry ingredients.
3. Mix together milk, molasses and eggs, then stir in the butter.
4. Combine and mix dry and wet ingredients, adding a little milk if it seems too thick.
5. Cook as you normally would for your waffle iron.
