Cheesy Grits with Sage

These grits are incredibly delicous and incredibly easy and incredibly versatile! Serve for breakfast with a fried egg, or serve for dinner with cooked greens or beans. They come from Mark Bittman’s How To Cook Everything Fast.

1 cup cornmeal
1¼ cup milk
1¼ cup water
1 heaping tbsp sage, chopped
½ cup cheddar, grated
  or 2 oz soft cheese

1. Bring milk and water to boil in small-medium saucepan.
2. Once boiling, turn heat to low and slowly add the cornmeal, sage and a healthy dash of salt while stirring with a whisk to prevent clumps.
3. Cover and cook on low for 10 minutes, until grits are thickened.
4. Stir in the cheese and serve.
